We brewed a brown base beer, part of which was fermented in stainless with ale yeast, and the rest of the wort was knocked out directly into chrysopolis barrels and fermented solely by Ducato house souring organisms and brett. Following fermentation, the beer was blended back together and all racked into freshly dumped Brunello barrels. The beer was aged for several months in these barrels, followed by a final blending process. 7% ABV.
